Flintstone Shank
whole Lakeland lamb shank, slowly braised in red wine with fresh herbs, garlic, tomatoes and aromatic spices, set onto a sweet potato mash, with the thickened juices and fresh vegetables

Woodalls Clucker
chicken breast, wrapped in Mr. Woodalls (by Royal Appointment, of course) smoked bacon, panfried and served with parmentier potatoes and a selection of vegetables, finished with a rosemary jus *

Boozy Beef
a slab of beef braised long and slow with local Bluebird Ale, tomatoes, shallots and served onto creamed potatoes and a mirepoix of fresh vegetables

Fishy...

*Saffron Salmon
Scottish salmon rubbed with lime juice and then poached in white wine and set onto a bed of braised fennel, with saffron potatoes, fresh vegetables and a dill beurre blanc

Citrus Cod
Cod fillet, baked with a citrus butter and placed onto a bed of stirfried vegetables and served with corn fritters and drizzled with a hollandaise sauce

*Souffliche For a Fun Guy! (v)
rather like a cross between quiche and soufflé without the pastry –a combination of sunblushed tomatoes with wild mushrooms, together with cream, eggs and seasoning, ovenbaked and topped with a slice of creamy goat’s cheese and served with new potatoes and crisp salad

Loafing Around (v)
A very tasty freshly made mixed nut loaf that has plenty of flavour, but no meat! Set onto a sweet potato mash and surrounded by a red pepper coulis and accompanied by fresh vegetables
